What is HACCP?

For thousands of years people have tried to make food safer, this is illustrated in many ancient cultures where complex codes of practice and laws concerning the processing and handling of food can be found. These procedures and laws have evolved to form modern regulations concerning the safety of food operations. HACCP is in theory a philosophy but in practice a tool.

What does HACCP stand for?

HACCP is an acronym for Hazard Analysis Critical Control Point. It is pronounced Hass-ap.

HACCP is a method of ensuring food safety by examining every step in food operation, identifying the steps that are critical to food safety and implementing effective control and monitoring procedures at these steps and is a recognised way of making sure that food safety hazards in your business are being managed responsibly and showing that this is being done day-in and day-out.

HACCP the philosophy:

Before making judgements about safety in general and critical points in particular, you have to have a thorough knowledge of the whole process – a way of thinking that embraces more than just food handling. Another important aspect is that every level of staff is involved in contributing to the end products.

HACCP the tool:

As a powerful tool HACCP avoids the many weaknesses which are found in the end product sampling. HACCP is a systematic approach to the identification, assessments and control of hazards and its implementation focuses on the factors that directly affect the safety of a product at all stages of the food chain. The implementation of HACCP can lead to less wastage of product, less expensive means of control and therefore economic advantages, HACCP must also be applied to raw material supply as well as to the final product, storage and retail.
